Sourdough is two organisms, wild yeast and bacteria, in symbiosis. Together they transform the grain to make it more healthful, more digestible, and also resistant to getting moldy or stale. Many people with wheat allergies or "yeast" allergies have no problem eating real sourdough. The natural wild yeast on the wheat berries create the unique cheese-like flavour, making it more suitable for savoury Italian Style Bread. | D. WHOLESOME GLUTEN-LESS BREADS No-Gluten & No-Wheat! This is suitable for those who are sensitive to gluten and wheat or who suffer from celiac disease. Gluten is a type of protein in wheat that makes the dough elastic. Research has shown that for those with gluten sensitivity or celiac disease, consuming gluten can slow down stomach activity, causing poor digestion and interfering with the absorption of nutrients.
